Fish patties

Ingredients

  • 454g (1 lb.) fish (salmon, cod, pike)
  • A bunch of fresh coriander
  • Zest of 1 lime
  • 2 eggs
  • 80g (2/3 cup) bread crumbs
  • 40g (3 tsp.) Brix 66 lemon-lime rosemary jelly
  • Hot pepper, to taste
  • Salt and pepper, to taste
  • 40g (2 to 3 tsp) grape seed oil for cooking

Preparation

Clean the fish fillet and make sure that there is no bone, dry and cut in fine cubes or in a food processor, but be careful not to cut too much so chunks remain.

Rinse and dry out the coriander, and keep a few branches for decoration. Chop the rest and add to the fish.

Add the lime zest, eggs, bread crumbs, salt and pepper, hot peppers (to taste), and mix well. Make patties with the mixture.

In a large pan, cook the oil. Once it is hot, add the fish patties and cook for a few minutes on each side.

Melt the lemon lime rosemary jelly by putting it in the microwave for a few seconds. Baste the patties once they are cooked. Garnish with the fresh coriander branches reserved earlier.

Suggestion

The pike is an often-unpopular choice, but it is perfect for this type of meal. It is a delicious fish to be discovered, in addition to being found locally.
